Campfire Treats

 


This week’s bake are Campfire Cupcakes adapted from Cupcake Jemma’s Cookie and Cream Oreo Cupcakes (for the cupcakes) and Lauren Miyashiro’s Campfire Cupcakes (for the decorations)


They are Chocolate Cupcakes with Cream filling, topped with orange, yellow and red butter cream frosting, pretzel sticks and roasted mini marshmallows !



The history of recreational camping is often traced back to Thomas Hiram Holding, a British travelling tailor, but. it was actually first popularised in the UK on the river Thames. By the 1880s, large numbers of visitors took part in the pastime, which was connected to the late Victorian craze for pleasure boating. 


In the US, camping may be traced to William Henry Harrison Murray's 1869 publication of Camp-Life in the Adirondacks resulting in a flood of visitors to the Adirondacks that summer.



The International Federation of Camping Clubs (Federation Internationale de Camping et de Caravanning) was founded in 1932 with national clubs from all over the world affiliating with it. By the 1960s, camping had become an established family holiday standard and today, campsites are ubiquitous across Europe and North America.



Here is the recipe:

For the Oreo Cupcake sponge: 

125ml Buttermilk (see link below to make your own)

125ml Cold Coffee

105ml Vegetable or Sunflower Oil 

2 Small Eggs

185g Caster Sugar 

140g Plain Flour 

1/2 tsp Bicarbonate of Soda 

1/4 tsp Salt 

35g Cocoa - I use Black Cocoa for that extra intensity 

40g Chocolate Chips


For the Filling: 

100ml Double Cream 

1tsp Icing Sugar 


For the Buttercream: 

200g Softened Unsalted Butter 

320g Icing Sugar 

3tbsp Whole Milk


Preheat oven to 160C fan  -  350F

In a large bowl sift and combine dry ingredients - set aside

Combine buttermilk, room temperature coffee, oil and 2 eggs

Add all of dry ingredients to wet ingredients and whisk together to combine

Pour into jug and evenly fill cupcake tin about 3/4 full


Bake 22 - 24 minutes until done

Decorations from Delish

Orange and Yellow food coloring

Pretzel sticks, for decoration

18 mini marshmallows

24 toothpicks, for decoration


Divide buttercream between two bowls and dye one bowl of buttercream orange, and the other yellow.

Alternating between orange and yellow, fill a large piping bag fitted with a large star tip. Pipe swirled buttercream onto each cupcake.


To decorate, arrange pretzel sticks, standing up, around the buttercream to look like sticks in a bonfire. Skewer two mini marshmallows onto each toothpick and stick a toothpick into each cupcake. Serve immediately.
