A Funfetti Confetti Cheesecake


 This week’s bake is a Funfetti Birthday Cake Cheesecake from Eloise Head of Fitwaffle Kitchen

It has a buttery custard cream base, a vanilla sprinkle cheesecake filling, topped with more sprinkles and whipped cream!

Confetti cake is a type of cake that has rainbow colored sprinkles baked into the batter. It is called confetti cake because when baked, the rainbow sprinkles melt into dots of bright color that resemble confetti.

Typically the batter is either white or yellow to allow for a better visual effect. The cake generally consists of flour, butter, baking powder, salt, sugar, vegetable oil, eggs, vanilla extract, milk, and rainbow colored sprinkles. The cake normally has a frosting made of butter, salt, powdered sugar, vanilla extract, and milk.

Confetti cake has inspired many interpretations such as confetti cheesecake, cookies, cereal bars, and even croissants.  Confetti cakes are also called funfetti cakes.


Here is the recipe:


Ingredients

Base:

350g Golden Oreo’s or Custard Creams

100g unsalted butter, melted


Cheesecake:

500ml double cream, cold

500g cream cheese, room temp

180g icing sugar

1 tsp vanilla extract

1/4 tsp almond extract (optional)

60g sprinkles

Topping:

Remaining whipped cream

Sprinkles

Mini Party Rings or Golden Oreo halves


Tin size: 8” spring form pan


Instructions

Place cookies in a food processor and mix until fine crumbs; 

place in a medium bowl and mix with melted butter

press into greased and parchment lined pan until smooth and flat

Refrigerate

Whip cream until stiff peaks

In a separate bowl mix cream cheese, icing sugar, vanilla & almond extract until fully combined

Fold in 2/3 of whipped cream and then gently fold in sprinkles

place on top of crust and smooth out evenly

Refrigerate overnight

Remove springform pan, top with sprinkles and pipe with remaining whipped cream

and add more sprinkles
