This week’s bake is Keto Sex in a Pan from Ketoserts ! It is a luscious and creamy dessert recipe that is keto, sugar-free and gluten free. It has layers of cheesecake and creamy chocolate pudding, with an almond flour and pecan crust, topped with whipped cream and cocoa powder.
A ketogenic diet – or keto diet – is a low-carb, high-fat diet. It can be effective for weight loss and certain health conditions, something that’s been demonstrated in many studies. A keto diet is especially useful for losing excess body fat without hunger, and for improving type 2 diabetes or metabolic syndrome.
When you eat far fewer carbs, your body begins to burn fat for fuel. This can put your body into a metabolic state called ketosis. In this state, your liver turns fat into small energy molecules called ketones, which your brain and other organs can use for energy.
Eating a keto diet lowers insulin levels, often dramatically, which can help you access your body fat stores for energy. Many studies show significant weight loss on keto, without having to count calories. Keto diets may have other positive health effects, such as reducing blood sugar levels.

Keto Sex in a Pan

Pan: 9x9 inch square pan
•INGREDIENTS •
•Pecan Crust•
1 1/2 cups (150g) blanched fine almond flour
1/2 cup (65g) pecan meal
1/4 cup (45g) powdered erythritol
1/3 cup (75g) melted salted butter
•Cheesecake Layer•
8oz room (225g) temperature cream cheese
1/3 cup (65g) powdered erythritol
1/2 teaspoon (2g) vanilla extract
1/2 cup (120mL) room temperature heavy whipping cream
•Chocolate Pudding Layer•
1 cup (240ml) heavy whipping cream
1 cup (240ml) unsweetened almond milk
1/2 cup (100g) powdered erythritol
4 large egg yolks
1/2 teaspoon (2g) xanthan gum
1/3 cup (35g) unsweetened cocoa powder
3 tablespoons (43g) unsalted butter, cut into pieces
1/2 teaspoon (2g) vanilla extract
•Whipped Cream Topping•
1 cup (240ml) heavy whipping cream
1/4 cup (45g) powdered erythritol
1/2 teaspoon (2g) vanilla extract
1 tablespoon (7g) unsweetened cocoa powder
1/2 ounce sugar free semisweet dark chocolate shavings
Directions
•Pecan Crust•
In a food processor, add almond flour, pecans, butter & erythritol and mix on low until a dough forms.
Press firmly into parchment lined pan and bake at 350 F for 12-15 minutes. Let cool.
•Cheesecake Layer•
Add cream cheese and erythritol to a large bowl and mix until smooth.
Add cream and vanilla and continue to mix.
Spread evenly on top of cooled crust and refrigerate
•Chocolate Pudding Layer•
Add almond milk, cream and erythritol to saucepan and heat over low heat, bring to a simmer.
Add egg yolks to 4 cup pryex cup and whisk
White continuing to whisk, slowly add heated cream to temper eggs and add mixture back to sauce pan
Add xanthan gum into mixture and continue to whisk over low heat
Add cocoa powder and continue to whisk for 3-5 minutes until thickened
Whisk in butter and vanilla until smooth
Cool for approximately 15 minutes and add to top of cheesecake layer
Refrigerate for 2 hours
•Whipped Cream Topping•
In a large bowl, beat cream, erythritol and vanilla until stiff peaks form
Add on top of pudding
Sprinkle cocoa powder and chocolate shavings over whipped cream and
refrigerate overnight
Yields 16 servings
