This week we are celebrating all things Raspberry !  This week's bake is a Raspberry White Chocolate Layer Cake from Cupcake Jemma !

6 layers of vanilla raspberry sponge cake filled with white chocolate butter cream and home made raspberry jam



Here is the recipe:

Raspberry White Chocolate Layer Cake Recipe | Cupcake Jemma

Raspberry Ripple Sponge (4 x 9" tins)

Preheat Oven to  375 F

Ingredients:

625g softened Unsalted Butter 

625g Caster Sugar 

10 Eggs 

625g SR Flour 

4 tbsp Whole Milk 

White Chocolate Butter Cream

500g softened Unsalted Butter 

730g Icing Sugar

Whole Milk to loosen

320g White Chocolate

Raspberry Goo  

400g raspberry

125g caster sugar

Meringue Kisses

mini marshmallow

5 egg whites 

300 g sugar

pinch of salt


Directions

Cake layers

Cream butter and sugar on medium high for 5 minutes until pale and fluffy

add eggs 2 at a time, scraping down side of bowl each time

add flour in 2 batches mix at slow speed

add 4 tbs milk and finish mixing by hand

Grease cake tins

add 2-3 tbs raspberry goo to batter and add batter to 1st cake tin - continue for each tin

bake cakes at 375 F for 20-25 minutes until toothpick comes out clean


White Chocolate Butter Cream

melt white chocolate

whip butter until pale and fluffy

add icing sugar in 2 batches 

add milk as needed

remove a small amount of frosting to decorate bottom of cake and add some raspberry goo

approximately 3:1 frosting to goo

add melted white chocolate to frosting and whip for 2 minutes


Assembly

Remove cakes from oven and let cool completely

once cool trim cakes to level and slice in ½ to double amount of layers 

place 1st layer on turntable and add raspberry goo

add butter cream to next layer, (2 dollops) alternating with each cake layer

Crumb coat cake and place in fridge for ½ hour

once set add 2nd layer of frosting

spread reserved raspberry butter cream to lower 1/3 of cake - refrigerate until set

spread raspberry goo on upper half of raspberry butter cream

Drip melted white chocolate ½ way down cake and spread over top of cake

Dip pre-made meringue kisses in melted white chocolate and then add freeze dried raspberries

add 7-8 kisses to top of cake
