The Good Taste of Divorce Cereal



Ruth, Rob's mother, was not shy about speaking of her divorce from Rob's father, circa 1964, which was not a common event for the time.  Rob vividly recalls his mother turning to comfort food during that period.  I think of "break up" comfort food as ice cream, which was a Sex and the City go to for Carrie Bradshaw and her friends, but Ruth turned to Kellogg's Corn Flakes during those days and weeks. To this day, Rob calls Kellogg's Corn Flakes "divorce cereal." That is not Ruth in the above vintage photo from the 1960s and her words would not have been "and a goody, good morning to you." She would have indeed chosen a word other than "delicious" to describe those 1964 breakfast mornings, which I shall not repeat here. 

Today, Rob baked a dessert which included Kellogg's Corn Flakes, a/k/a divorce cereal. Below is the recipe from which he created yet another scrumptious sensation. 

Cereal Milk Tres Leches Cake Recipe

INGREDIENTS
use 11" x 7" baking dish

For the crispy cornflakes:
100g cornflakes            
25g caster/granulated sugar        
25g malted drink powder                
60g melted unsalted butter        
pinch of salt

For the cereal milk:            
150g evaporated milk            
250g condensed milk            
6 tbsp whole milk            

For the sponge:
Butter (for greasing the dish)
3 large free range eggs          
90g caster sugar            
85g plain flour            
1 tsp baking powder            
¼ tsp salt                
2 tbsp whole milk            
30g caster sugar            
¼ tsp vanilla extract             

To top:
Approx 300ml Double Cream, whipped    

DIRECTIONS:
Put cornflakes in medium bowl and mix in sugar, malt powder, melted butter and salt
Once corn flakes are covered in buttery mixture - spread out cornflakes on baking tray
and bake at 325 for 10 min - give them a little shuffle after 5 min

Set cornflakes aside and mix the 3 milks together

Pour ½ of warm corn flakes in large bowl and pour milk over corn flakes
Leave the milk flakes to steep overnight

Grease only bottom of baking dish - not sides
Separate 3 eggs and add 90 grams of caster sugar to egg yolks

Whisk until pale and fluffy - about 3 min

add flour, baking powder and salt to yolk/sugar mixture and stir with spatula to form a paste
add 2 tbs whole milk and vanilla and stir together with paste

whip egg whites to soft peaks and add 30 g sugar and continue to whisk
fold egg whites into paste - add just a little of whites into paste to loosen up paste
then add rest in 2 lots - folding in slowly with metal spoon

pour into baking dish - level out
bake at 375 for about 20 min  - skewer needs to come out clean
once baked turn down oven and leave cake in oven for 10 min with door slightly open

Remove cake from oven and stab holes in cake all over
Strain corn flake milk - squish it through as much as possible

Transfer milk to a jug and pour over entire cake 

Leave it to cool and then refrigerate for 2 hours - overnight

Once cooled top with whipped cream and the cover with remaining ½ of cereal


The finished bake leaves a mouth watering sensation and is harmonious in appearance. Rob has turned "divorce cereal" into a beautiful marriage of ingredients.  Thank you for stopping by and spending time with our blog. - Linda
